Ingredients

12 eggs, beaten
1 jar (2 1/2oz) dried beef, cut into thin strips
1 cup creamed cottage cheese
1/4 cup snipped green onion tops (or chives)
1/4 cup butter or margarine

Procedures

Mix eggs, dried beef, and cheese. Cook and stir onion tops in butter in skillet over low heat until tender, about 3 minutes. Stir in egg mixture. As mixture thickens, gently lift cooked portion with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook until eggs are thickened but still moist, about 15 minutes.
